Cookies & Cupcakes (JOE’S BDAY PARTY 2)

In addition to the Zucchini Chocolate Chocolate Chip Muffins that I made ahead of time for my cousin’s birthday, I also wanted to make some cookies and cupcakes! I made the cookie dough ahead of time as well and the cupcakes the day of the party.


I’ve written about these “surprise peanut butter middle chocolate cookies” before… they are one of my favorites! But they take a while to make. The chocolate dough has to be chilled before flattening out each cookie in preparation to be filled with the peanut butter middles.

It can get a little messy but they’re fun to make (and so worth the work!!!) 🙂

They turned out well! Everyone loved them! 😀


Since it was a birthday party… I had to make something I could decorate for the occasion! So I decided on chocolate cupcakes with white icing that I would decorate to look like the Philadelphia’s baseball team’s mascot The Phillie Phanatic! 🙂 It was not as clean looking as I would have liked since I was decorating cupcakes as if it were a flat sheet cake… But I think it turned out pretty well!

And Joe enjoyed “helping cleaning up” by sampling the leftover icing!!! haha

It was a very fun day! Great food, wonderful family, many laughs. 🙂

Chocolate Mint Birthday Cupcakes

So it was my friend Jenny’s birthday in April but she decided to celebrate in early March and we all know that once March rolls around, everyone thinks green (Shamrock Shakes, St. Patty’s Day, etc). As chance would have it, Jenny and I both share the love of the color green (any shade of green really). So when deciding what to bring to her birthday bowling bash I knew I wanted to incorporate green into the overall look of what I made. So I started with my “go-to” traditional chocolate cake recipe from the Better Home’s and Gardens Cook Book and tampered with it from there.

As a side note, whenever I bake I always have my laptop in the kitchen with me… whether to blast some good tunes or to watch a new episode of one of my favorite TV shows, my laptop is there on the counter top trying to stay flour or cocoa powder-free as I whip up my latest creation. Well, one of the new shows I’ve been recently hooked on has been Cupcake Wars. While watching one of the crazy Taste Challenge rounds of the show I decided to inject Nocilla into the center of my traditional chocolate cupcakes and top them with a mint frosting (which I colored green with food coloring) and an “after eight”-like mint candy. They turned out really well! Here’s a pic!

What I’ve done before now…

Hi all!

So, I’ve been struggling with “where to begin” because I’m far from just beginning my baking/crafting endeavors… So what I’ve decided to do in this post is to kind of summarize some of the neatest things I’ve done recently but then in my next post start from now and dedicate a post per dessert, DIY project, etc. Does that work for you? I hope so. Ok, so here goes nothing!!!

Ok so here are some birthday cupcakes that someone ordered from me that turned out pretty well. She requested one dozen chocolate cupcakes and one dozen vanilla cupcakes with the icing colored like “Monster High” which is the newest girl fad at the moment. I decided to take it a step further and try to make the logo with Royal Icing. This was a complete risk because I had never worked with Royal Icing before… and boy was it tough. I MUST give a big shout out and thank you to Mighty Morgan for her step by step guide to making the toppers. Hers turned out wonderfully, and I think mine turned out pretty well considering it was by first Royal Icing experience!! Let me know what you think!

And I think that’s where I’ll stop because I could go on and on about what I’ve done in the past… but I’m more excited about the things I’ll come up with next!! I’ve been getting rather innovative with my recipes, trying new things, etc. It’s more exciting going “off book” and tampering with pretty much every recipe I come across and making it my own!
